INGREDIENTS:

1 medium zucchini, cut into cubes
1 medium red capsicum, cut into cubes
1 medium eggplant, cut into cubes
1/2 punnet cherry tomatoes
1/2 packet haloumi, cut into cubes
Chilli flakes
Garlic paste
Olive oil
10-15 skewers soaked in water overnight

METHOD:

1. Place veggies and haloumi into a medium bowl and toss in garlic, chilli flakes and olive oil to coat.

2. Skewer everything onto the skewers and fry/grill over high heat until the veggies are soft and the haloumi is golden.
