INGREDIENTS:

Handful of baby spinach roughly chopped
6 large eggs
1/4 cup Greek feta
pinch of mixed dried herbs
1/4 cup grated cheese
4 sun-dried tomato in oil roughly chopped

METHOD:

  1. Pre-heat oven to 180 degrees celsius
  2. Combine all ingredients in a medium sized mixing bowl
  3. Evenly distribute mixture amongst a 12 pan muffin tin
  4. Place in the oven for 10-12 minutes or until cooked through
  5. Enjoy!

These delicious frittatas are the perfect on-the-go brekkie or snack for when you feel like something soft, squishy and satisfying.
